Obviously you do not have to be post partum to enjoy this prep! These are just things that are freezer-friendly, high protein, and nutrient dense. You can choose to also just keep any of this in your fridge if you plan to enjoy within the week!

 

The breakfast sandwiches have about 40g of protein and the protein balls are loaded with amino acids, energizing blood builders, healthy fats, and of course protein.

ENGLISH MUFFIN BREAKFAST SANDWICHES

INGREDIENTS:

12 eggs

8 oz mushrooms

2 shallots or half a small onion

optional breakfast sausage

pepperjack cheese slices

salt + pepper to taste

red pepper flakes to taste

6 english muffins

 

INSTRUCTIONS:

  1. Preheat oven to 375

  2. Dice shallot and mushrooms, and add to a large baking sheet or 9×9 inch baking dish with some olive oil. Place in the oven for 5 minutes.

  3. Meanwhile in a large mixing bowl, crack and scramble the eggs, adding desired amount of seasonings

  4. Remove the baking dish from the oven and pour the scrambled egg mixture. Return to the oven for about 15-20 minutes if using a baking sheet or 30-35 minutes if using a 9×9 baking dish.

  5. If using a 9×9 baking dish, you can cut the egg bake into 6 square slices or if using a large baking sheet, you will have more slices and can double stack them on each english muffin.

  6. Make your breakfast sandwich by layering the eggs with the pepperjack cheese. I wrapped mine in parchment paper and secured with a rubberband to store in the freezer.

 
 

PB CHOCOLATE CHIP PROTEIN BALLS

INGREDIENTS:

1 C organic oats

1 C natural peanutbutter

1/3 C hemp seeds

3 scoops protein powder (code BARENUTRITION for 20% off)

6 scoops colostrum (code BARENUTRITION) (optional)

1/4 C gogi berries

1/4 C honey

1/2 C chocolate chips

 

INSTRUCTIONS

Simply mix all ingredients together until combined and form into balls.
