WEEKLY MINI MEAL PREP: cowboy caviar, superfood waffles, chia oat pudding

ingredients:

  • 1 bell pepper, diced

  • 1/2 red onion, finely chopped

  • 1 C tomatoes, diced

  • 1 can black beans

  • 1 can pinto beans

  • 1 can blackeyed peas

  • 1 C corn

  • 1 jalapeno, finely chopped (optional)

  • juice of 1 lime

  • 2 Tb applecider vinegar or champagne vinegar

  • 1 Tb hot honey (may sub regular honey)

  • cilantro, to your heart’s desire

  • parsley, to your heart’s desire

  • generous drizzle of olive oil

  • salt + pepper

Simply combine everything and toss it together. This is delicious as a snack, side, or meal. You can eat it plain, with chips, over some shredded kale or other greens, inside of tacos, etc. etc.

SUPERFOOD WAFFLES/PANCAKES

ingredients:

  • 1 1/2 C organic oats

  • 1 ripe banana

  • 2 eggs

  • 1 1/4 C milk

  • if making pancakes, add another 1/4 C liquid

  • 2 Tb hemp seeds

  • 2 Tb chia or flax seeds

  • 2 Tb coconut sugar

  • optional 2 scoops collagen

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • optional (suggested) toppings: almond butter or butter, banana slices, maple syrup, walnuts

Add oats to a blender first, and blend until it is a flour. Then add all other ingredients and blend until a smooth batter forms. Add to your waffle maker or a skillet for pancakes. I highly recommend topping with almond butter, banana slices, and some organic maple syrup.

SMASHED RASPBERRY CHIA OAT PUDDDING

ingredients:

*add the following to each jar for each servings

  • 2 Tb chia seeds

  • 2 Tb flax seeds

  • 1/4 C oats

  • 1/3 – 1/2 C milk

  • 1 Tb cacao nibs

  • 1 Tb honey

  • 1-2 Tb plain yogurt or coconut yogurt

  • smashed raspberries

  • cinnamon to taste

Smash raspberries at the bottom of your jar, then add all other ingredients and stir together. Allow to sit for at least 10-15 minutes before consuming for the pudding consistency to form. Option to top with additional fruit and walnuts.
