GREEK SALAD
Ingredients:

1 cucumber chopped

pint cherry tomatoes, halved

1 can chickpeas

1/2 C chopped artichoke hearts

optional pepperoncinis
-
Tb olive oil
-
juice of a lemon
-
fresh parsley, chopped
-
fresh dill, chopped
OVERNIGHT CHIA BLUEBERRY OATS
*serves about 3
Ingredients:
-
1 C gf organic oats
-
1 C milk of choice
-
1 C blueberries, smashed at the bottom
-
1/4 C chia seeds
-
1/4 C hemp seeds
-
Tb maple
-
dash cinnamon
-
optional scoop of collagen or protein powder (which clearly would be quite processed, so I left it out)
Simply combine everything together and allow to sit for at least 30 min, but best overnight! Top with banana slices and chopped walnuts. Stays well for 4-5 days.
